50g | butter |
1 | brown onion, finely chopped |
1 | garlic clove crushed |
200g | button mushrooms, thinly sliced |
125ml | dry white wine |
300ml | pure cream |
1 tbs | finely chopped fresh thyme |
4 | crumbed schnitzel |
Oil for frying | |
Salt and pepper to season |

For the creamy mushroom sauce, melt the butter in a fry pan over a medium heat. Add onion, garlic and thyme and cook, stirring occasionally, for 5 mins or until the onion has softened. Stir in the mushrooms and cook for a further 5 minutes. Add in wine and cream, increase the heat and bring to the boil, then simmer for a further 10. Season and keep warm while cooking the schnitzel.
