Preheat oven to 180 degrees Celsius. (Fan forced)

Pat chicken dry inside and out with paper towel. Gently work your hands between the skin and the flesh of the breasts to loosen the skin, being careful not to make any holes, then spread 150g of the butter over the flesh. Spread the remaining butter all over the chicken skin. Place lemon halves and thyme into the cavity.

Season chicken with generous amounts of salt and paper and place in a roasting pan.

Cook for 1hr 20mins (20mins per 500g). scatter beans around side of chicken and base in roasting juices. Return to the oven for a further 10mins.

Take chicken and beans from the oven, leave to rest, carve and serve.
